Set deep within the heart of the Somerset countryside, this project transforms a run-down historic pub into a restaurant and boutique hotel, for owner and Michelin-star chef Merlin Labron-Johnson.

The ‘farm-to-table’ restaurant celebrates the local produce of the region, and our design has sought to enhance this experience. While the original pub was viewless and inward looking, the new restaurant faces outwards, with new openings and windows bringing light into the building and setting up long views over the countryside.

The kitchen is located at the centre of the restaurant, so that diners are encouraged to experience the cooking process, sometimes invited to take part in tasting sessions at the chef’s table.

The emphasis on the local is also embodied in the commissioning of local designers and craftsmen and the use of locally sourced materials. This includes using timbers from the neighbouring wood, leathers and fabrics produced close to Bruton and floor finishes made out of local earth, compacted into a breathable and acoustically absorbent earthenware floor.

On the floors above, four bespoke boutique hotel rooms have been created, each unique from the other, in response to the features and idiosyncrasies of the historic building. The gardens that surround the building include tasting stations and areas for food production, integrated with the restaurant.
